Amanda's Bruschetta

Happy Wednesday! We are so glad you are joining us for another great #AmandasKitchen recipe!

Bruschetta makes it easy to get some great antioxidants and antimicrobial foods into your day in a very delicious way! You can also customize this based on your dietary restrictions and preferences. I purchased everything for this recipe at United Grocery.

  • 1 package Campari tomatoes (I used these because they are a little sweeter and firmer)

  • Fresh basil to taste (I used about 2 T Gourmet Garden lightly dried Basil for convenience)

  • 1 tsp salt (I used Pink Himalayan sea salt)

  • ½ tsp pepper

  • 1 tsp oregano

  • 3 T olive oil

  • 1 T balsamic vinegar

  • 1 baguette (I used Sourdough)

  • Roasted garlic (recipe posted)

  • Fresh mozzarella (Buffalo or Goat Milk Mozzarella are even better)




  1. Preheat oven to 375º F

  2. Dice tomatoes and place in a medium-sized bowl

  3. Mix in basil, salt, pepper, oregano, olive oil, and vinegar

  4. Taste and add more of any ingredient to your taste

  5. While letting mixture “marinate,” cut the baguette into slices the size of your choice

  6. Spray a baking sheet with coconut oil or other spray oil before placing baguette slices

  7. Brush tops of baguettes with butter (or be lazy like me and use cooking oil spray)

  8. Bake baguettes in the oven until tops are golden to your liking

  9. Top baguettes slices with tomato mixture, roasted garlic, and mozzarella
