Amanda’s Kitchen - Pulled Pork Carnitas

Hello everyone and welcome to my kitchen! My name is Amanda, I am the Nurse Practitioner at the Center for Functional Medicine. I have created some healthy and delicious recipes to share with you each week!
This week, we will kick things off with my Pulled Pork Carnitas! This recipe is super simple and it’s a crockpot meal! Just start it before you leave for work and you’ll have a mouthwatering dinner ready when you get home. You’ll only need SIX ingredients and a few minutes to throw it all together.
1 pork butt (however much your crockpot can hold)
1 6-oz can V8 juice
Dried cilantro, salt, and pepper (to your liking)
Cholula or other hot sauce (about a tablespoon)
2 tablespoons apple cider vinegar
Place pork butt in the crockpot, then add all of the other ingredients.
Cook on LOW for about 8 hours.
Take the pork out with tongs and place it on a baking sheet.
Broil on 500º, stirring occasionally, until meat is a little crispy on top.
Serve with limes, cilantro, red onions, salsa, and guacamole!
I like to serve this meal with Siete brand cassava and almond flour tortillas, as well as Siete chips, which are all grain-free and Reboot compliant!
